Louis - If you have diabetes or know someone who does, you know
how challenging it can be to choose and prepare foods low in sugar,
fat and sodium. University of Missouri Extension is teaming with
St. Louis County Health Department to offer a series of cooking
classes for St. Louis County residents that can help.
"Dining with Diabetes" is a three-class series designed
to teach healthy food choices for people with diabetes, healthy
versions of familiar foods that are easy to prepare, and cooking
techniques that use new or more healthful ingredients.
Classes will be held 2-4 p.m. Tuesdays, August 2, 9, and 16 at
North Central Community Health Clinic, 4000 Jennings Station Rd.,
St. Louis, MO 63121. Class size is limited to 35.
Classes are free to St. Louis County residents with diabetes
or diabetic family members and are not limited to clinic patients.
Each two-hour class will include nutrition instruction, cooking
demonstrations and recipe sampling. Participants also will receive
copies of the recipes. A diabetes educator or registered dietitian
will be available to answer questions.
"This program is intended to help people with diabetes learn
how to make better use of artificial sweeteners, low-fat products
and herbs and spices," says Cynthia Fauser, extension nutrition
and health education specialist headquartered in St. Louis County.
"It’s not intended to provide individualized meal plans for
participants or to replace diabetes education provided by qualified
health professionals."
St Louis County residents may register by contacting the St.
