Q: How does the Department of Health (DOH) receive complaints?
A: DOH receives most complaints through the St. Louis County website. Complaints are also received via telephone. When complaints are received an inspector must respond to all complaints. Many complaints are found to be invalid. When complaints are proven to be valid, the inspector will work with the establishment operator to gain compliance.
Q: What are the most common complaints regarding Asian restaurants?
A: The most common complaint that the DOH receives regarding Asian restaurants are the presence of pest. When the inspector finds that there is a pest infestation at a restaurant, a pest control plan is required. An effective plan will eliminate pest that are already in the establishment and prevent future infestations.
An effective pest control plan will include the following:
* Exclusion of Pest - inspect the interior and exterior walls and roof for any openings (cracks, crevices, holes) the size of a dime or larger. All dime-sized openings should be eliminated as a rodent can enter into your restaurant through this type of opening.
* Keep all Food in Closed Containers - food of all types should not be left out or accessible without opening some sort of container (refrigerator, pantry, trash can with secure lid, etc). Foods stored in cardboard boxes should be off the floor.
* All Surfaces Should be Kept Clean and Sanitized - clean and sanitize work areas with an approved disinfectant after each use.
* Reduce the clutter - organize your supplies and tools so that every item is easily accessible. As items become piled up, they provide a place for bugs or rodents to hide. Also, keep all products off the ground.
* Obtain a Professional Pest Control Operator - if you are experiencing a rodent infestation, quickly call a pest control specialist. They can develop a plan that will address the infestation. The Pest Control Operator will also use chemicals and methods that are approved for use in a restaurant.
